Garlic
Planted during the winter and harvested by hand as summer arrives, garlic is one of the Kitchen Garden's most rewarding crops. Our gardeners enjoy growing a range of varieties, each bringing its own character to the kitchen. From the red-skinned Red Duke Wight to the fragrant Spanish Vallelado Wight, every bulb delivers a punch of flavour that elevates seasonal dishes.

Blueberries
Hidden away in our fruit cages, blueberries are among summer's sweetest treasures. Picked by hand at peak ripeness, they're enjoyed fresh throughout the season and carefully preserved wherever possible to brighten menus during the colder months ahead.
From indulgent puddings and pastries to sauces served alongside game dishes later in the year, these versatile berries continue to inspire long after the harvest has ended.

Moorland Blueberry & Almond Tart with Crème Fraîche
Courgettes
Tender, delicate and incredibly versatile, our courgettes are harvested while still young—often when they're only a few inches long. This early picking ensures a subtle flavour and beautifully soft texture that chefs love working with throughout the summer months.
Whether shaved into light seasonal salads, charred over fire, or paired with the freshest coastal catch, courgettes are a true summer staple.

Growing in vibrant ruby-red clusters throughout our fruit cages, redcurrants are one of summer's brightest and sharpest flavours. Their natural tartness makes them a favourite ingredient across both the kitchen and bar.
Handpicked by our gardeners, they're transformed into everything from sweet desserts to savoury accompaniments, while our bar teams infuse them into garden syrups for refreshing seasonal cocktails.

Broad Beans
There is something wonderfully satisfying about podding broad beans—the gentle pressure of your thumb along the seam and that unmistakable pop as vibrant green beans emerge from their velvety pods.
When they're freshly picked in July, broad beans need very little preparation. Their beans, leaves and even young pods are tender, sweet and delicious enough to enjoy almost straight from the garden.

Radish
By July, our radishes are at their absolute best: crisp, peppery and packed with character. We grow a variety of colours and flavours across the Kitchen Garden, from candy-striped French Breakfast Radishes to rich purple Viola and golden Zlata varieties.
