THE PIG hotel at Combe is beautifully secluded and located only 8 miles from the stunning Devonshire coast. Much like the other PIGs, the Kitchen Garden is the beating heart of THE PIG-at Combe. We are committed to home grown produce and anything we are unable to produce ourselves will be sourced locally.
Meet the chefs...
Chef James Golding has been at THE PIG in Brockenhurst since it first opened its doors in 2011, dishing up uncomplicated, simple British food. Shooting, fishing and foraging are a way of life in the New Forest and clearly inspired James, growing up in Hampshire. At 16 he moved to London to start a Specialised Chef Apprenticeship; he then went onto work at The Savoy under acclaimed chef Anton Edelmann. After a successful career at The Savoy, Le Caprice, J Sheekey and Soho House New York, James moved back to Hampshire to pursue full-time foraging at THE PIGs.
Chef Dan Gavriilidis has been promoted from his senior Sous Chef position at THE PIG-near Bath., bringing his vast experience and passion for local produce to THE PIG-at Combe. The Kitchen Garden at Combe has 3 walled gardens, the vegetable garden, the herb garden and the infusion garden, perfect for Daniel's love of local produce. From an early age Dan presented a keen interest in cooking which led him to London where he studied cooking at university. After 10 years in London working at various restaurants Daniel moved to Bath and his PIG journey began!
Thursday 25th July - Summer in the Kitchen Garden
At this time of the year the kitchen garden is in full flourish, home-grown produce and fizz will be celebrated!
The evening will start with some Piggy Bits and a glass of English fizz followed by a tour of our walled kitchen gardens with our Head Kitchen Gardener Alex. You'll get to learn more about out philosophy and commitment to home grown and local produce. We have partnered with local vineyard, Castlewood, who are located only 8 miles from us! Castlewood Vineyard specialise in exceptional sparkling wine made from the noble grape varieties.
James will then talk you through the 3-course menu for the evening, a delicious summer garden supper with perfectly paired wines from Castlewood Vineyard. Rob Corbett the owner and winemaker from Castlewood will be on hand to lead you through his selection of wines, and will explain why it is such an exciting time to be making English wine.
Thursday 12th September - Charcuterie and Pickles with 'A Pinch of Salt'
Our continental neighbours have been slicing saucission and breaking bread with friends over breakfast, lunch and dinner for centuries! Now Britain has its own distinctive, world class charcuterie, with many producers priding themselves on providing the most natural surroundings for their animals which leads to great flavours and outstanding quality produce for your charcuterie platter.
James will be joined by Alan Bartlett who owns a 'Pinch of Salt', a British curing company, to create menu that celebrates all things smoked, cured, dried and pickled. The Sommelier team at THE PIG- at Combe will handpick the wines to be paired with the dishes. The evening will kick start with a glass of something fizzy and some Piggy Bits, followed by your sharing supper.
Thursday 14th November - Game Supper
The Glorious Twelfth is long past and partridge season is in full swing, so on this very seasonal evening we will be celebrating the countryside and all the variety that game can bring to our menus.
The evening will start with some Piggy Bits and a pre-dinner tipple, James Golding, will then talk you through the menu. The menu involves a 3-course game-inspired supper with perfectly - paired wines chosen by our Sommelier team. Joining us will be Justin Lascelles, Estate Manager from our neighbouring Combe Estate, who will be talking us through a day in the life of a game keeper.
