Our menus are guided by the seasons and the daily harvest from our Kitchen Garden - as well as local growers and suppliers.
A few old favourites are back this autumn
To mark our 15th birthday, a handful of serious 'OG' PIG dishes are making a comeback - unmistakable Piggy plates created for our very first menu back in 2011, by the chefs who pioneered them and still lead our kitchens today.
A celebration of the people, the stories and the memories shared around the table for fifteen years and counting. Find them on the 25 Mile Menu from 7th September until Sunday 18th October.
Garden Beetroot & Whipped Blue Cheese Salad
Originally created for The Catey Awards - hospitality's answer to the Oscars - where our team took over the kitchens at London's Grosvenor House to feed 1,400 industry guests. Vibrant, earthy and unmistakably PIG.
Bath Chap & Fennel Roast Pork Fillet to Share
Our fifteen-year showpiece, made from the whole jaw of the pig - salted overnight, then slow-cooked for hours until it's golden and crisp on top, falling off the bone underneath. One guest famously mistook it for a chop and nearly fainted.
Lex's Mint Mousse with Dark Chocolate Sorbet
On the menu since day one. We grow around 20 mint varieties in our Kitchen Gardens, and chocolate peppermint turned out to be the perfect match for this palate-cleansing pudding - especially with a dollop of dark chocolate sorbet
